Last night I roasted cubed sweet potatoes and quartered brussels sprouts dressed with mustard, maple syrup and cajun seasoning, and we had super thin pork chops under the broiler. So good!

Tonight was spagetti night! With salad & garlic bread...and of course, red wine. One of our favourite suppers.

I have some steak to cook up so I'll do a stroganoff tonight with broad noodles. DH is drinking red wine these days, but I know where some is stashed just for this very recipe.

Pan-fried pork steaks and asparagus. I was going to grill it but I'm out of propane. It was really good in the pan, though. I had them in brine since yesterday afternoon.

chicken wings, leftover sushi pizza, dumplings. Just a real assortment! I had to look up sushi pizza. Sounds very interesting! It is delicious! There is a little Japanese restaurant in Port Perry that makes the best sushi pizza. I know this because I like it so much that I started ordering it everytime I went to a Japanese restaurant, but none of them were as good as the one right here! So I only order in Port Perry!

I had thawed a little beef roast, but didn't feel like doing the roast beef dinner thing. So this morning I chopped it up and threw it in the crock pot for stew. I used a random recipe I quickly googled on my phone, and it was really good!

Made this beef/corn bake casserole thingy, from the Company's Coming cookbook, that I've made since forever, but my crew likes it, and I can practically make it in my sleep now, and it's quick and easy.

What are you all having for Christmas dinner (if you celebrate Christmas)? I'd like to make something a little special but not too challenging, and not something that could go horribly wrong. Would love to hear your ideas! We stopped doing a big turkey 3 years ago. Now we just buy a turkey breast roast and a small spiral ham. We're pretty traditional. It'll be those 2 things, my stuffing, mashed/gravy, green salad, mini croissants, brussels sprouts & carrots.
I alternate between this recipe for the brussels and Pioneer Woman's recipe for whisky glazed carrots, just substituting the brussels in for the carrots. I usually let everyone else pick which way we're going to do the brussels and the carrots. If they pick the whisky glaze for the brussels, then I usually just steam the carrots because my husband is boring and doesn't like the carrots jazzed up all that much, although he does like the whisky glaze for them, once in a while.

I decided I would roast a tenderloin using a recipe from Geoffrey Zakarian. But Doug did the shopping this week and got filet mignon steaks instead of a tenderloin, which is fine, it means dinner will take less time to cook, but I was hoping for leftover tenderloin.
Maybe I'll get the tenderloin I wanted for NYE instead.
We're going to have roasted potatoes and broccoli and I'll make a red wine sauce to go with the filets.

We're having prime rib, mashed potatoes, roasted green beans and popovers. DD and DH are doing the cooking since I did Thanksgiving.

Ds is doing Christmas Eve which is a charcuterie board, pasta and artichokes with cookies for dessert
Christmas Day- prime rib, roasted potatoes, green beans and salad. Rum pie for dessert
