I was seriously craving a caramel macchiato yesterday, so I tried to make caramel, but it turns out I actually made Werther's Hard Candies instead, except they are in a large flat disk that I have to break into pieces to enjoy.
We've been eating a lot of comfort food (aka: carbs and fat); but I have been moderating my intake so I don't go over my WW points. I made gluten free banana pancakes - one banana, mashed, whipped together with 2 eggs. They cook just like regular pancakes, although the batter is extremely liquid. And they taste like you would think banana pancakes should taste but less fluffy.

I was wondering yesterday if this might actually be the thing that gets me to plan meals and be semi-comfortable cooking. Probably not, but maybe?
Last night we had ravioli in red sauce (not homemade), and I made brussels sprouts in the [toaster] oven. No recipe. Sounds silly but I generally can't/won't do anything without a recipe. I just tossed them in olive oil, salt, pepper, and garlic powder, guessed at a temperature and time, and did it. And they were actually good and nothing burned and no one died.

We don't eat out that often because our choices are severely limited.
So with that, things are being cooked as usual. One thing though is I am cooking more things that we have in the freezer. I need to do a good inventory of all our frozen and shelf items and try and get to the store before we have a total shutdown.

I’m going back to my weekend meal prep for lunches during the week. Winging it is making me eat more than I normally do

I made stuffed cabbage soup in the instapot. It came out great, I was hoping for leftovers but dh had 3 bowls (I have a 3 qt pot)

It's like pioneer days around here. I have about 20 bottles of beer I will never drink so I have been playing with bread recipes, seeing as suddenly the rest of the world decided to be bread bakers too and there is no yeast. All left overs get eaten or repurposed or frozen. My daughter is completely annoyed with my rigid cataloguing of our "supplies" lol!

I ordered yeast for my big grocery order tomorrow. Making bread is in my very near future

I read a whole article on how to make yeast using dried fruit yesterday. Not sure why, I am not likely to bake bread, Doug is the baker.
I am making chocolate chip cookies tonight.

I need to make tortillas and bread. Good thing I bought a tortilla press over the summer (which is still in the box!).

Today I’m making a lot of soup. I don’t want anything to go bad and we’ve had a lot of root vegetables in our farm deliveries. So far I have made chicken & rice, and potato leek. Still want to do a curried butternut squash soup and maybe cream of mushroom, and then some carrot and parsnip “fries”. Once I finish with those, I will just have about 47 onions left plus a bunch of salad until our next delivery on Thursday. I feel like everyone is much more conscious about not wasting food now. I know I am.
