I am having a hard time eating protein. I don’t really care for meat very much. Once in a very blue moon I’ll eat a burger. If DH is having steak I’ll have a bite sometimes. I like fish.
I really like eggs andI like things mixed in with eggs (omelette and quiche and things like that).
Tonight I made a blue apron vegetarian quiche with mushrooms, onions and roasted peppers. It was great and I ate my whole portion.
Any good egg recipes? I was thinking quiche with spinach and bacon maybe? Prosciutto and cheese (gruyere?)
Any ideas? I need I get my iron up.

I'm a lazy cooker, so here are a few of my quick egg recipes:
Veggie omlet: I have a tiny non-stick skillet. I put in a dap of olive oil and sautee a couple small sweet peppers and some garlic...or really what ever veggies are handy. When the veggies are heated through I beat a bit of milk into 2 eggs and poor it over the veggies. I flip it once, add cheese, and cook 'til it is all melty.
3-minute Eggs Benedict: The secret for this is poaching the egg in the microwave. Put half a cup of water into a 1-2 cup pyrex measuring cup. Break an egg into the water. Microwave on high 90 seconds (adjust to preference). Build the eggs benedict as usual.
Tater tot quiche: Line a quiche pan with a layer of tater tots. Bake 10-15 minutes. Remove from oven, add quiche filling of choice, and bake as you would usually bake a quiche. It's easier and more tasty than a crust!
I also sometimes make mini quiches in muffin tins and freeze them for quick meals or snacks. There are a ton of how to's on the web for that.

Heat a glug or two of olive oil in a frying pan, than add some chopped garlic and saute until lightly browned and fragrant. Them dump a bag of baby spinach or spring mix or whatever you got in your fridge, add some salt and pepper and stir it about until it's all wilty. Then put it on a plate and set aside. Add a little more olive oil if needed and break two eggs into the pan, let the whites just begin to go white, and throw in about two tablespoons of balsamic vinegar, let the eggs get those nice crispy Sunnyside up edges, while you reduce the balsamic to a nice thick sweet sauce. ( The less adventurous in my house scramble the egg gently during this step) Slide the eggs and the sauce on top of your greens and garlic, and enjoy!

We like frittatas. We use this as a rough guide. allrecipes.com/recipe/120052/asparagus-frittata/My DH says he has a theory that any food would be better with a fried egg on top and is on a quest to prove that. I love making mini quiche, I buy prepared tart crust and place them in muffin tins, make a big batch of omelette mixture and put a few tablespoons in each cup as the base. Then I sautee whatever veggies I want to throw in and add cheese, I also love doing spinach and feta. They freeze well and are great to grab for a quick breakfast.
